Salmon with Orange Cranberry Glaze

Ingredients

  • 1 1/2 cups Minute Maid® Heart Wise® Orange Juice
  • 2 teaspoons Cornstarch
  • 1 cup Craisins® dried cranberries, orange flavor
  • Rosemery, fresh, 15-20 small leaves
  • 1/2 teaspoon Kosher salt
  • Pinch cayenne pepper

Directions

  1. Dissolve cornstarch in ¼ cup orange juice.
  2. Place remaining orange juice, Craisins, rosemary, salt and pepper in a sauce pan.  Heat to medium and bring to a gentle boil while stirring frequently.
  3. Pour cornstarch mixture into boiling juice mixture.  Continue to boil and stir until thickened.

Serve with broiled, grilled or baked salmon.  Portion 4 oz. glaze per 4 oz. serving of salmon
