Chef Gerard Viverito, is the Director of Culinary Education for Passionfish, a NGO non-profit organization dedicated to educating people around the globe on the issue of sustainability in the seas. Dr. Joe Keenan is a recently retired Professor of Family Medicine at the University of Minnesota. He holds a joint professorship in the University of Minnesota School of Food Science and Nutrition. His research interest is preventive cardiology with a special interest in the use of nutrition and nutritional supplements in the reduction of cardiovascular disease risk. Dr. Keenan has been awarded over $6 million in research grants and has published more than 50 scientific articles dealing with his research. Dr. Rebecca S. Reeves is past president of the American Dietetic Association. Health and fitness were never a way of life for me until the age of 45 when I first stepped foot into a gym. I was completely overweight and unhealthy, had no confidence or self-esteem, and felt OLD. That was my turning point….I decided to hire a personal trainer to learn how to workout and eat healthier foods. Gradually I lost the weight, trimmed the fat, and got strong both physically and mentally.
Then I discovered the sports of Bodybuilding and Powerlifting. I entered my first Powerlifting meet December 2002 at age 46. I was hooked...and have been competing and setting/breaking State, National and World Records ever since. I’ve ventured into competition at Bodybuilding events starting November 2003 at age 47.
Others read or hear my story, see the results and are inspired. That’s the part most gratifying for me.

Richard E. Collins, M.D., an accomplished cardiologist and author of Cooking With Heart, is currently an associate cardiologist with South Denver Cardiology Associates. He directs the Heart Healthy Culinary Gallery and Lifestyle Wellness Program at The South Denver Heart Center, Littleton, CO. He is a preventive cardiologist involved in heart disease risk reduction.
Dr. Collins received his medical degree from the University of Nebraska College of Medicine and obtained his cardiovascular training at The Mayo Clinic, Rochester, MN. With her patients, Susan works on two levels. The first is the rational side of moving to healthier eating. It is about education, making sure people understand what they should eat and what they should not eat. She helps them think about how to eat better and how many calories can be eaten to achieve a target weight over a reasonable length of time.
On another level, Susan works with her patients to understand why they eat. In many cases, patients find that the unhealthy calories consumed have nothing to do with being hungry. Rather, eating is used to cope with stress, anxiety and sadness as well as boredom.
